Biological Activity

Description Olive oil comes from the fruits of Olea europae trees with a beneficial effect on human health, including the antioxidant activity and anti-inflammatory activity when olive oil is in regular diet.
In vitro

Among the polyphenols of olive oil, oleuropein, hydroxytyrosol, and resveratrol possess marked antioxidant activity and reduce monocytoid cell adhesion to stimulated endothelium, as well as vascular cell adhesion molecule-1 (VCAM-1) mRNA protein expression, which is proved to be related to NF-kB and activator protein-1.[1]

    The polyphenols of olive oil are added to tissue culture medium for 30 minutes at various concentrations, after which VCAM-1 expression is induced by the addition of LPS at 1 μg/mL for a further 16 h.
